Culinary Labs is a four-part series in which chefs don lab coats and perform experiments with food, turning their kitchens into laboratories that produce radically new dishes to benefit the taste buds of all humankind. The first of the Culinary Lab Series, Chef Edgar Guiterrez brings the seductive spice of Mexico to mix with the splendour of Chef David Leeder's reimagined cuisine .
David Leeder's culinary history has taken him through many top kitchens in the world including the three Michelin-starred Martin Berasategui restaurant in Lasarte, Spain, as well as Noma, 108 and Relae in Copenhagen, Denmark. He has also partnered with Fare Magazine, a Glasgow-based publication, to do a series of pop-up dinners in Scotland. In Canada, David has established himself as a mainstay in the Edmonton pop-up dining scene under the brand “Dela,” in partnership with bartender Elizabeth Yu.
Chef Edgar Gutierrez has been on the rise in Edmonton’s culinary scene for over 15 years. With stops working at some of the best kitchens in the city – it wasn’t until reconnecting with old industry friends did Chef Edgar really evolve his love and passion for nueveo-Mexican cuisine. With the opening of Tres Carnales in 2011 bringing authentic Mexican street food to the City of Champions – and most recently the opening of Rostizado – the Tres Carnales Group’s newest restaurant concept, Chef Edgar’s food has been wildly acclaimed both locally and nationally.
